Mediterranean Baked Fish Recipe
Ingredients:
- 4 fish fillets (such as sea bass, snapper, or cod)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 lemon (zested and juiced)
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and halved
- Fresh parsley, chopped (for garnish)
Instructions:
1. Preheat the oven to 400°F (200°C).
2.Prepare the baking dish: Drizzle 1 tablespoon of olive oil in a baking dish.
3. Season the fish: In a small bowl, mix the minced garlic, lemon zest, lemon juice, oregano, thyme, salt, and pepper. Rub this mixture over the fish fillets.
4. Arrange the vegetables: Place the cherry tomatoes and Kalamata olives around the fish in the baking dish. Drizzle with the remaining olive oil.
5. Bake: Cover the dish with foil and bake for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
6. Garnish and serve: Remove from the oven, sprinkle with fresh parsley, and serve with lemon wedges.
