Ingredients


For the meat mixture:

- 2 slices of white bread

- 1 cup milk

- 2 tablespoons vegetable oil

- 2 onions, finely chopped

- 2 cloves garlic, minced

- 1 pound (450g) ground beef or lamb

- 2 tablespoons curry powder

- 1 tablespoon sugar

- 1 tablespoon vinegar (white or apple cider)

- 1 tablespoon chutney (fruit chutney is traditional)

- 1 tablespoon apricot jam

- 1 teaspoon salt

- 1/2 teaspoon black pepper

- 2 eggs

- 1/2 cup raisins or sultanas (optional)

- 1 tablespoon lemon juice

- 2 bay leaves


For the topping:

- 2 eggs

- 1 cup milk

- A pinch of salt


Instructions


1. Preheat the Oven: Preheat your oven to 350°F (175°C).


2. Prepare the Bread Mixture: Soak the bread in the milk for about 10 minutes. Once soaked, squeeze out the excess milk and set both the bread and milk aside.


3. Cook the Onions: In a large skillet, heat the vegetable oil over medium heat. Add the onions and garlic, cooking until the onions are soft and translucent.


4. Add the Meat: Increase the heat and add the ground meat to the skillet. Cook until browned.


5. Spice It Up:Stir in the curry powder, sugar, vinegar, chutney, apricot jam, salt, pepper, lemon juice, and raisins (if using). Mix well and let it cook for a few more minutes.


6. Combine with Bread: Crumble the soaked bread into the meat mixture, along with the reserved milk. Mix until well combined.


7. Add Eggs: Beat the two eggs and add them to the mixture, stirring well.


8. Transfer to Baking Dish: Pour the meat mixture into a greased baking dish. Smooth the top and place the bay leaves on top.


9. Prepare the Topping: In a bowl, whisk together the eggs, milk, and a pinch of salt for the topping. Pour this mixture over the meat.


10. Bake: Bake in the preheated oven for about 30-40 minutes, or until the topping is set and golden brown.


11. Serve: Allow to cool slightly before serving. Bobotie is often enjoyed with yellow rice and chutney on the side.
